The cookie dough has to chill in the refrigerator for a couple of hours before baking, but it’s totally worth it and you can busy yourself with many other tasks while waiting. At any rate, no time will be wasted and the oatmeal chocolate chip cookies will set up perfectly!

Once you start making these on a regular basis, the process will be fairly easy and quick! In most cases, I usually like to make the cookie dough the day before I bake the cookies. For instance, after work on a Friday evening, I mix up a batch and by Saturday morning I am ready to roll them up and pop them into the oven. This is perfect timing for family events and get togethers over the weekend! These fresh baked treats will be loved by old and young alike.

With a twist of coconut sugar, warmth of beloved vanilla, and hearty-chewiness delivered by the whole rolled oats, guests and family members will be asking you how you made them! But don’t worry, we have the recipe available to share!

My husband witnessed my then 7-year-old nephew attempting to shove a couple of these cookies into his pockets before realizing that he instead wanted to eat them on the spot. How’s that for a compliment?

High Quality Ingredients:

The key to baking is using the best ingredients possible. High quality and local are favorites among my family and it makes a world of difference when it comes to taste!

Butter

Let’s start with the butter. You want grass fed butter. Its high quality can’t be matched, it also contains healthy omega fats and the taste it superb. Bake with Grass fed butter, my family uses Kerry Gold or Nellies Grass fed butter. If you can find a local grass-fed butter source, better yet!

Coconut Sugar

One of my favorite ingredients. Coconut sugar is derived from the sweet nectar of the coconut tree flower blossoms. Not only does this provide a unique flavor profile, but it has a low-glycemic quality that is nourishing. This ingredient gives these oatmeal chocolate chip cookies a pleasant flavor profile.

Brown Sugar

Dark brown sugar. Again, buy organic. We are not trying to be pretentious here, to make the best quality baked goods you want to have pure ingredients. To clarify, buying organic will help you avoid glyphosate and other pesticides that are sprayed onto huge crops. In addition, brown sugar will add a caramelized depth to this cookie that you won’t want to miss!

Egg

You want a nice, plump egg for this recipe. Our family loves shopping for local eggs at the towns farmer’s market.

Vanilla

Vanilla extract. Always buy pure vanilla extract. True vanilla is the star of the show, it also provides the flavor that pulls everything together into a perfect harmony.

Oats

Organic old fashioned rolled oats, we use Bob’s Red Mill brand. These oats are non-GMO and organic, so we are working with clean material for our cookies.

Flour

All-purpose flour. Use your choice of an organic all-purpose flour. Think clean.

Chocolate

Dark Chocolate chips. Can’t have an oatmeal chocolate chip cookie without the chocolate!

Baking soda

Another ingredient is baking soda, it will provide the cookie with some height and structure.

Cinnamon

Cinnamon is full of antioxidants and has a flavor that will blast this cookie into A+ territory!

Salt

Pink Himalayan salt is full of minerals.

Walnuts

Walnuts contain healthy fats that add a nutty and hearty profile to the recipe. (optional)
Our family uses raw walnut halves. We personally love the bigger chunks of walnuts, so we only give them a quick couple chops before throwing them into the cookie dough. but if you prefer, they could be swapped out for smaller pieces of chopped walnuts.

The walnuts can be omitted if desired, but they are definitely recommended for all walnut lovers!

Instructions for Oatmeal Chocolate Chip Cookies:

First, use an electric mixer to combine butter, coconut sugar, brown sugar, egg and vanilla. About 1-2 minutes until creamed.

Second, utilize a separate, large bowl to thoroughly whisk oats, flour, salt, baking soda and cinnamon.

Thirdly, pour dry ingredients from the large bowl into wet ingredients in the electric mixer. Mix until just combined; do not over mix.

Pour well combined mixture into large separate bowl. (This will provide you with more room to work with for adding in your additions)

Now, add chocolate chips and walnuts. (optional)

Fold everything together

Chill dough in refrigerator for at least two hours.

When dough is ready, form 1″ balls and arrange on cookie sheets.

Bake at 350 for 11-13 minutes, depending on your oven, watch carefully to prevent burning. Remove cookies from oven and let cool on cookie sheet.

Cool cookies to room temperature, then remove cookies off baking sheet with spatula. ENJOY!

Materials

  • 1/2 cup Salted butter grass fed
  • 1/4 cup Coconut sugar organic
  • 1/2 cup Dark brown sugar organic
  • 1 Egg free range, local
  • 1 tbsp Vanilla extract
  • 1 1/2 cup Organic old-fashioned whole rolled oats Bob's red mill
  • 3/4 cup All purpose flour organic
  • 1/2 tsp. Baking soda
  • 1 tsp Cinnamon
  • 1 pinch Pink Himalayan salt
  • 1/2 cup Chopped Walnuts optional
  • 3/4 cup Dark chocolate chips

Instructions

  • In electric or stand mixer, combine butter, coconut sugar, brown sugar, egg and vanilla until creamed. About 1-2 minutes.
  • In a separate, large bowl, thoroughly mix oats, flour, salt, baking soda and cinnamon.
  • Pour dry ingredients into wet ingredients. Mix until just combined; do not over mix.
  • Pour mixture into the separate large bowl that was previously used for dry ingredients. (This will provide you with more room to work with for adding in your additions)
  • Fold in chocolate chips and walnuts until dispersed evenly throughout.
  • Chill dough in refrigerator for at least two hours or up to a week
  • Once dough is chilled, form 1" balls
  • Arrange dough balls on cookie sheet with room to spare for spreading
  • Bake at 350 for 11-13 minutes, after the 11 minute mark watch carefully to prevent burning.
  • Remove cookies from oven and let cool on cookie sheet.
  • Once cookies are cooled to room temperature it's safe to remove cookies off baking sheet with spatula
  • ENJOY! Share with your loved ones.

Notes

If you have a family, I highly doubt there will be leftovers. But in the occurrence you can’t eat them all, or if you are planning to take them to a future family shindig you may store cookies in an airtight container at room temperature.
Storage: Although, I do not believe you will run into this “problem”, these cookies will last for about one week. My counter has never been home to these popular treats for more than 48 hours! Share with your neighbors!
